All of the meat on the charcuterie boards is made by John Ratliff, a Farmington local. While in high school John worked for Three Rivers Brewery as a cook. He moved away after graduating to pursue a culinary degree. He now owns a very popular salumeria in Brooklyn, New York called Ends Meat. At Ends Meat John breaks down whole, local, humanely raised animals to make Old World style dried products. All of John's products are fermented and salt cured from six to eighteen months before they are ready to consume.
